Ingredients
- 1 (2-3 lb) pork loin
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 1/4 cup pineapple juice
- 1/4 cup red wine vinegar

- 1 (20 oz) can pineapple chunks, drained
Directions
- Preheat oven to 350 degrees F.
- Season pork loin with salt and pepper.
- In a large skillet over medium-high heat, heat olive oil. Add pork loin and brown for 3-4 minutes per side.
- In a small bowl, whisk together garlic, brown sugar, soy sauce, ketchup, pineapple juice, red wine vinegar, and ground ginger.
- Pour sauce over pork loin and top with pineapple chunks.
- Bake in preheated oven for 40-45 minutes, until pork reaches an internal temperature of 145 degrees F.
- Let rest for 5 minutes before slicing and serving.
