Ingredients
1 (2-3 lb) pork loin
Salt and pepper, to taste
2 tablespoons olive oil
2 cloves garlic, minced

Directions
Preheat oven to 350 degrees F.
Season pork loin with salt and pepper.
In a large skillet over medium-high heat, heat olive oil. Add pork loin and brown for 3-4 minutes per side.
In a small bowl, whisk together garlic, brown sugar, soy sauce, ketchup, pineapple juice, red wine vinegar, and ground ginger.
Pour sauce over pork loin and top with pineapple chunks.
Bake in preheated oven for 40-45 minutes, until pork reaches an internal temperature of 145 degrees F.
Let rest for 5 minutes before slicing and serving.
