Ingredients

  • 1/2 cup sweet almonds, ground
  • 1/2 cup pastry cream
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 4 large tamale husks

Directions

  1. In a medium bowl, mix together the sweet almonds, pastry cream, sugar, cinnamon, vanilla extract, and almond extract until fully combined.
  2. Lay out the 4 tamale husks on a flat surface.
  3. Divide the almond and pastry cream mixture between the 4 husks, spreading the mixture evenly.
  4. Fold the husks over the filling, closing the ends. Secure with a piece of kitchen twine.
  5. Place the tamales in a steamer and steam for 25 minutes.
  6. Remove the tamales from the steamer and let cool slightly before serving.
