Ingredients
1 spaghetti squash, halved lengthwise and seeded
3 tablespoons olive oil
3 cloves garlic, minced
1 pound large shrimp, peeled and deveined
1/2 cup white wine
1/4 cup freshly squeezed lemon juice
2 tablespoons butter
1/4 teaspoon red pepper flakes
Salt and pepper to taste
2 tablespoons chopped fresh parsley
Directions
Preheat oven to 400°F. Grease a baking sheet with olive oil.
Place the spaghetti squash cut-side down on the prepared baking sheet. Roast in preheated oven until tender, about 30 minutes.
Once squash is cooked, use a fork to scrape the flesh into spaghetti-like strands.
Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant, about 1 minute.
Add the shrimp and cook until just pink, about 3 minutes.
Stir in the wine, lemon juice, butter, red pepper flakes, salt, and pepper. Simmer until sauce is reduced and thickened, about 5 minutes.
Stir in the spaghetti squash and parsley and cook for 2 minutes.
Serve warm.
