Shrimp Scampi with Spaghetti Squash

Ingredients

  • 1 spaghetti squash, halved lengthwise and seeded
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup white wine
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons butter
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Preheat oven to 400°F. Grease a baking sheet with olive oil.
  2. Place the spaghetti squash cut-side down on the prepared baking sheet. Roast in preheated oven until tender, about 30 minutes.
  3. Once squash is cooked, use a fork to scrape the flesh into spaghetti-like strands.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant, about 1 minute.
  5. Add the shrimp and cook until just pink, about 3 minutes.
  6. Stir in the wine, lemon juice, butter, red pepper flakes, salt, and pepper. Simmer until sauce is reduced and thickened, about 5 minutes.
  7. Stir in the spaghetti squash and parsley and cook for 2 minutes.
  8. Serve warm.
