Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, chopped
  • 1 cup baby spinach
  • 1 cup feta cheese, crumbled
  • 1/4 cup Parmesan cheese, grated
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat air fryer to 375°F.
  2. Add olive oil to a large skillet over medium-high heat. Add onions and garlic and cook until vegetables are softened, about 3 minutes.
  3. Add mushrooms, spinach, feta cheese, Parmesan cheese, oregano, salt, and pepper. Cook until the spinach is wilted and the cheese is melted, about 5 minutes.
  4. Transfer the mixture to an air fryer-safe dish. Air-fry for 10 minutes.
  5. Serve warm.
