Ingredients

  • 4 egg whites
  • 1 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup raspberry jam
  • 1/4 cup strawberry jam
  • 1/4 cup apricot jam

Directions

  1. Preheat the oven to 225°F (110°C) and line two baking sheets with parchment paper.
  2. In a clean, dry mixing bowl, beat the egg whites until foamy using an electric mixer on medium speed.
  3. Add the cream of tartar to the egg whites and continue to beat until soft peaks form.
  4. Gradually add the sugar, a tablespoon at a time, while continuing to beat at medium speed.
  5. Beat the mixture until stiff peaks form and the sugar is completely incorporated.
  6. Gently fold in the vanilla extract using a spatula.
  7. Transfer the meringue mixture into a pastry bag fitted with a plain round tip.
  8. Pipe small, round meringue kisses onto the prepared baking sheets, leaving space between each.
  9. Using a small teaspoon, create a small indentation in the center of each meringue kiss.
  10. Spoon a small amount of raspberry, strawberry, or apricot jam into the indentation of each meringue kiss.
  11. Bake the meringue kisses in the preheated oven for 1 hour, or until they are dry and crisp to the touch.
  12. Remove from the oven and let them cool completely on the baking sheets.
  13. Once cooled, gently remove the meringue kisses from the parchment paper.
  14. Serve and enjoy!
