Ingredients
- 2 tablespoons olive oil
- 2 medium onions, diced
- 2 cloves garlic, minced
- 4 cups summer squash, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
Directions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the summer squash, oregano, basil, salt, and pepper. Cook for an additional 5 minutes.
- Transfer the mixture to a 9x13-inch baking dish. Sprinkle with the cheddar and Parmesan cheeses.
- Bake for 25 minutes, or until the cheese is melted and bubbly.
