Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup buffalo sauce
- 2 tablespoons olive oil
- 1 head of lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 2 tablespoons blue cheese crumbles
Directions
- In a shallow bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
- Cut the chicken breasts into bite-size pieces and coat them in the flour mixture.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until golden and crispy, about 5 minutes. Remove from heat.
- In a medium bowl, mix the buffalo sauce with the cooked chicken pieces. Set aside.
- Divide the lettuce, tomatoes, and red onion among four bowls.
- Top each bowl with the buffalo chicken and blue cheese crumbles.
