Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buffalo sauce
  • 2 tablespoons olive oil
  • 1 head of lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 2 tablespoons blue cheese crumbles

Directions

  1. In a shallow bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
  2. Cut the chicken breasts into bite-size pieces and coat them in the flour mixture.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until golden and crispy, about 5 minutes. Remove from heat.
  4. In a medium bowl, mix the buffalo sauce with the cooked chicken pieces. Set aside.
  5. Divide the lettuce, tomatoes, and red onion among four bowls.
  6. Top each bowl with the buffalo chicken and blue cheese crumbles.
  7. Serve and enjoy!
