Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 bell peppers, diced
2 tomatoes, diced
1/2 pound mushrooms, sliced
1 teaspoon dried oregano
1 teaspoon smoked paprika
1/4 teaspoon saffron threads
3 cups vegetable broth
2 cups uncooked short-grain white rice
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 cup fresh parsley, chopped
Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion, garlic, bell peppers, tomatoes, and mushrooms. Cook, stirring occasionally, for 5 minutes.
Add the oregano, smoked paprika, and saffron. Cook for 2 minutes.
Add the vegetable broth, rice, salt, and pepper. Bring to a boil, then reduce heat to low and simmer, covered, for 15 minutes.
Remove from heat and let sit, covered, for 5 minutes.
Stir in the parsley and serve.
