Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, diced
- 2 tomatoes, diced
- 1/2 pound mushrooms, sliced
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/4 teaspoon saffron threads
- 3 cups vegetable broth
- 2 cups uncooked short-grain white rice
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, garlic, bell peppers, tomatoes, and mushrooms. Cook, stirring occasionally, for 5 minutes.
- Add the oregano, smoked paprika, and saffron. Cook for 2 minutes.
- Add the vegetable broth, rice, salt, and pepper. Bring to a boil, then reduce heat to low and simmer, covered, for 15 minutes.
- Remove from heat and let sit, covered, for 5 minutes.
- Stir in the parsley and serve.
