Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 2 tomatoes, diced
  • 1/2 pound mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon saffron threads
  • 3 cups vegetable broth
  • 2 cups uncooked short-grain white rice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, garlic, bell peppers, tomatoes, and mushrooms. Cook, stirring occasionally, for 5 minutes.
  3. Add the oregano, smoked paprika, and saffron. Cook for 2 minutes.
  4. Add the vegetable broth, rice, salt, and pepper. Bring to a boil, then reduce heat to low and simmer, covered, for 15 minutes.
  5. Remove from heat and let sit, covered, for 5 minutes.
  6. Stir in the parsley and serve.
