Ingredients
- 3 large sweet potatoes, peeled and cubed
- 3 tablespoons vegan butter
- 1/4 cup non-dairy milk
- 2 tablespoons maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped pecans
- 2 tablespoons vegan brown sugar
Directions
- Preheat oven to 375°F (190°C).
- Add cubed sweet potatoes to a large pot and cover with water. Bring to a boil and cook until potatoes are soft, about 20 minutes.
- Drain potatoes and add to a large bowl. Add vegan butter, non-dairy milk, maple syrup, cinnamon, and salt. Mash until smooth.
- Transfer mashed potatoes to an 8x8 inch baking dish. Sprinkle with pecans and brown sugar.
- Bake in preheated oven for 15 minutes, or until top is lightly browned.
