Roasted Leeks with Eggs (Paleo and Keto Friendly)

Ingredients

  • 3 large leeks
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 4 eggs

Directions

  1. Preheat oven to 400 degrees F.
  2. Cut the leeks into 1/2 inch slices and place them in a bowl.
  3. Add the olive oil, garlic powder, salt and pepper to the bowl and mix until the leeks are evenly coated.
  4. Spread the leeks on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes.
  6. Crack the eggs onto the baking sheet and spread them around the leeks.
  7. Bake for an additional 10 minutes.
  8. Serve and enjoy!
