Ingredients
- 3 large leeks
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 4 eggs
Directions
- Preheat oven to 400 degrees F.
- Cut the leeks into 1/2 inch slices and place them in a bowl.
- Add the olive oil, garlic powder, salt and pepper to the bowl and mix until the leeks are evenly coated.
- Spread the leeks on a baking sheet lined with parchment paper.
- Bake for 20 minutes.
- Crack the eggs onto the baking sheet and spread them around the leeks.
- Bake for an additional 10 minutes.
- Serve and enjoy!
