Summer Pasta with Basil, Tomatoes and Cheese

Ingredients

  • 1 lb. of any kind of short pasta (penne, farfalle, etc.)
  • 2 cups of cherry tomatoes, halved
  • 1/4 cup of fresh basil, chopped
  • 1/2 cup of Parmesan cheese, grated
  • 2 tablespoons of olive oil
  • Salt & pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook until tender, about 10 minutes.
  3. Drain the pasta and transfer it to a large bowl.
  4. Add the tomatoes, basil, cheese, olive oil, salt and pepper and toss to combine.
  5. Serve warm or at room temperature.
