1/2 cup shredded cheese, such as cheddar or Monterey Jack
3 eggs
2 cups milk
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions
Preheat oven to 350°F (175°C). Grease an 8-inch (20 cm) square baking dish with butter.
In a medium skillet, heat butter over medium-high heat. Add onion, bell pepper, mushrooms and garlic and sauté until vegetables are tender, about 5 minutes.
Spread bread cubes in the prepared baking dish. Top with the sautéed vegetables and cheese. In a medium bowl, lightly beat eggs. Add milk, salt, and pepper and mix well.
Pour egg mixture over bread and vegetables. Gently press down on the bread to make sure it is all submerged in the egg mixture.
Bake for 30 minutes, or until golden brown and the center is set.
Let cool for 10 minutes before serving.
