Ingredients
- 4-5 lbs short ribs
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1/4 cup tomato paste
- 1 teaspoon Italian seasoning
- 1/2 cup red wine
- 1/4 cup balsamic vinegar
- 1/2 cup beef broth
- 2 tablespoons fresh thyme leaves
Directions
- Set the electric pressure cooker to the saute setting.
- Add the olive oil and heat until the oil is shimmering.
- Add the short ribs and cook until browned, about 4 minutes per side.
- Remove the short ribs and set aside.
- Add the onion and garlic to the pressure cooker and cook until softened, about 5 minutes.
- Add the tomato paste, Italian seasoning, red wine, balsamic vinegar, beef broth, and thyme leaves to the pressure cooker and stir to combine.
- Return the short ribs to the pressure cooker and stir to coat.
- Secure the lid and set the pressure cooker to high pressure for 25 minutes.
- Allow the pressure cooker to naturally release the pressure for 10 minutes, then manually release the remaining pressure.
- Serve the short ribs with the sauce.
