Ingredients

  • 4-5 lbs short ribs
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 cup red wine
  • 1/4 cup balsamic vinegar
  • 1/2 cup beef broth
  • 2 tablespoons fresh thyme leaves

Directions

  1. Set the electric pressure cooker to the saute setting.
  2. Add the olive oil and heat until the oil is shimmering.
  3. Add the short ribs and cook until browned, about 4 minutes per side.
  4. Remove the short ribs and set aside.
  5. Add the onion and garlic to the pressure cooker and cook until softened, about 5 minutes.
  6. Add the tomato paste, Italian seasoning, red wine, balsamic vinegar, beef broth, and thyme leaves to the pressure cooker and stir to combine.
  7. Return the short ribs to the pressure cooker and stir to coat.
  8. Secure the lid and set the pressure cooker to high pressure for 25 minutes.
  9. Allow the pressure cooker to naturally release the pressure for 10 minutes, then manually release the remaining pressure.
  10. Serve the short ribs with the sauce.
