Ingredients
- 1 lb. ground beef
- 1/2 cup chopped onion
- 1 (14.5 oz.) can diced tomatoes
- 1 (6 oz.) can tomato paste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
- 1 (8 oz.) package cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mozzarella cheese, shredded
- 1 (16 oz.) package lasagna noodles, cooked according to package directions
Directions
- Preheat oven to 350°F.
- In a large skillet over medium-high heat, cook ground beef and onion until beef is no longer pink. Drain off excess fat.
- Add diced tomatoes, tomato paste, Italian seasoning, garlic powder, salt, and pepper to the skillet. Simmer for 10 minutes.
- In a medium bowl, mix Parmesan cheese, cream cheese, and sour cream until well combined.
- Lay cooked lasagna noodles out on a work surface. Spread each noodle with cream cheese mixture, then top with mozzarella cheese.
- Roll up each noodle and place in a 9x13-inch baking dish.
- Pour beefy tomato sauce over the top of the lasagna roll-ups. Sprinkle with additional mozzarella cheese, if desired.
- Bake for 25-30 minutes or until heated through and cheese is melted and bubbly.
