Ingredients

  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1 (14.5 oz.) can diced tomatoes
  • 1 (6 oz.) can tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup grated Parmesan cheese
  • 1 (8 oz.) package cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mozzarella cheese, shredded
  • 1 (16 oz.) package lasagna noodles, cooked according to package directions

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet over medium-high heat, cook ground beef and onion until beef is no longer pink. Drain off excess fat.
  3. Add diced tomatoes, tomato paste, Italian seasoning, garlic powder, salt, and pepper to the skillet. Simmer for 10 minutes.
  4. In a medium bowl, mix Parmesan cheese, cream cheese, and sour cream until well combined.
  5. Lay cooked lasagna noodles out on a work surface. Spread each noodle with cream cheese mixture, then top with mozzarella cheese.
  6. Roll up each noodle and place in a 9x13-inch baking dish.
  7. Pour beefy tomato sauce over the top of the lasagna roll-ups. Sprinkle with additional mozzarella cheese, if desired.
  8. Bake for 25-30 minutes or until heated through and cheese is melted and bubbly.
