1 cup (2 sticks) unsalted butter, at room temperature
1 1/2 cups sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup almond flour
2 tablespoons water

Directions
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a large bowl, whisk together the flour, baking powder, and salt.
In the bowl of an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Add the vanilla and mix until combined.
Add the flour mixture to the butter mixture and mix until combined. Add the almond flour and mix until combined. Add the water and mix until combined.
Using a cookie scoop, scoop the dough onto the prepared baking sheets, making sure to leave enough space between the cookies. Bake for 12-15 minutes, or until golden brown.
Remove the cookies from the oven and let cool on the baking sheets for 5 minutes. Transfer the cookies to a wire rack to cool completely.
Once the cookies are cool, dip the ends of the cookies in the red or pink sugar sprinkles to make them look like fingers.
