Ingredients
- 1/2 cup butter, melted
- 1 cup light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup old-fashioned rolled oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sweetened shredded coconut
- 1/2 cup semi-sweet chocolate chips
Directions
- Preheat oven to 375 degrees F.
- In a large bowl, cream together the melted butter and brown sugar until smooth.
- Add the egg and vanilla extract and mix until well combined.
- In a separate bowl, whisk together the flour, oats, baking soda and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the coconut and chocolate chips.
- Drop by rounded tablespoons onto parchment-lined baking sheets.
- Bake for 8-10 minutes, or until edges are golden brown.
- Remove from oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
