Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound cooked shrimp, peeled and deveined
  • 4 ounces shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives

Directions

  1. Preheat oven to 350°F.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion and bell pepper and cook until softened, about 5 minutes.
  4. Add garlic powder, cumin, chili powder, salt, and pepper and cook for 1 minute.
  5. Add shrimp and cook until warmed through, about 3 minutes.
  6. Remove from heat and stir in cheese, tomatoes, and olives.
  7. Transfer shrimp mixture to a 9-inch baking dish.
  8. Bake for 15-20 minutes, or until cheese is melted and bubbly.
  9. Serve hot.
