- 2 tablespoons olive oil
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder

- 1 pound cooked shrimp, peeled and deveined
- 4 ounces shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
Directions
- Preheat oven to 350°F.
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper and cook until softened, about 5 minutes.
- Add garlic powder, cumin, chili powder, salt, and pepper and cook for 1 minute.
- Add shrimp and cook until warmed through, about 3 minutes.
- Remove from heat and stir in cheese, tomatoes, and olives.
- Transfer shrimp mixture to a 9-inch baking dish.
- Bake for 15-20 minutes, or until cheese is melted and bubbly.
- Serve hot.
