Ingredients

  • 4 sole fillets
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 1/2 cup white wine
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup bread crumbs
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup butter

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium skillet, heat olive oil over medium heat. Add onion, garlic, bell pepper, and mushrooms. Cook for 5 minutes, or until vegetables are softened.
  3. Add white wine, parsley, basil, oregano, salt, and pepper. Simmer for 2 minutes.
  4. Remove from heat and let cool slightly.
  5. In a bowl, combine bread crumbs, parmesan cheese, and butter. Mix until combined.
  6. Lay sole fillets on a baking sheet. Divide vegetable mixture evenly among fillets. Top with bread crumb mixture.
  7. Bake for 15 minutes, or until fish is cooked through and topping is golden brown.
