Ingredients

  • 4 cups watermelon rind, peeled and cubed
  • 1 cup white vinegar
  • 1/2 cup white sugar
  • 2 tablespoons sea salt
  • 2 tablespoons ginger, minced
  • 2 tablespoons garlic, minced
  • 1 tablespoon red pepper flakes

Directions

  1. In a medium saucepan, combine the vinegar, sugar, salt, ginger, garlic, and red pepper flakes.
  2. Bring to a boil over medium-high heat, stirring occasionally.
  3. Reduce the heat to low and simmer for 5 minutes.
  4. Add the cubed watermelon rind and simmer for 15 minutes, stirring occasionally.
  5. Remove from heat and let cool completely.
  6. Transfer the cooled watermelon rind and pickling liquid to a jar or container with a lid.
  7. Refrigerate for at least 1 hour before serving.
