Ingredients

  • 1/2 cup of all-purpose flour
  • 1/4 teaspoon of baking powder
  • 1/4 cup of sugar
  • 1/4 teaspoon of salt
  • 2 tablespoons of butter, melted
  • 1 egg
  • 1/4 cup of milk
  • 1 teaspoon of vanilla extract
  • 1 cup of fresh strawberries, cut into small pieces
  • 1/2 cup of heavy cream
  • 2 tablespoons of powdered sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
  2. In a medium bowl, combine flour, baking powder, sugar, and salt. Mix until well combined.
  3. In a small bowl, whisk together melted butter, egg, milk, and vanilla extract. Slowly add wet ingredients to the dry ingredients, stirring until just combined.
  4. Fold in the strawberries and pour the batter into the prepared pan. Bake for 25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  5. In a medium bowl, whip the heavy cream until stiff peaks form. Add the powdered sugar and continue whipping until combined.
  6. Serve the cake warm with a dollop of whipped cream.
