Ingredients

  • 2 cups of fresh strawberries, hulled and sliced
  • 1/3 cup of sugar
  • 2 tablespoons of fresh lemon juice
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of cold water
  • 2 teaspoons of unflavored gelatin
  • 1 cup of heavy cream

Directions

  1. In a medium bowl, combine the strawberries, sugar, lemon juice and vanilla extract. Stir until the sugar is dissolved and the mixture is well combined. Cover and refrigerate for at least 1 hour.
  2. In a small bowl, combine the cold water and gelatin. Stir until the gelatin is dissolved and set aside.
  3. In a large bowl, whip the heavy cream until soft peaks form. Set aside.
  4. Remove the strawberry mixture from the refrigerator and stir in the gelatin mixture. Stir until the gelatin is fully incorporated.
  5. Fold the whipped cream into the strawberry mixture until completely combined. Divide the mixture into individual serving dishes or one large dish and refrigerate for at least 2 hours.
  6. Serve chilled and enjoy!
