Ingredients

  • 1 large eggplant, diced
  • 2 zucchinis, diced
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese

Directions

  1. Preheat your air fryer to 375°F.
  2. In a large bowl, combine the diced eggplant, zucchini, bell pepper, tomatoes, onion, garlic, olive oil, salt, and pepper.
  3. Mix until everything is evenly coated with the oil.
  4. Place the mixture in the air fryer and cook for 15 minutes, stirring halfway through.
  5. Once the vegetables are cooked, remove from the air fryer and transfer to a serving dish.
  6. Sprinkle with the Parmesan cheese and serve.
