Ingredients
- 1 lb. shrimp, peeled and deveined
- 1 cup shredded coconut
- 1/2 cup all-purpose flour
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 2 eggs, beaten
- 1/2 cup coconut oil, for frying
Directions
- In a shallow bowl, combine the flour, garlic powder, onion powder, salt, and pepper.
- In a separate shallow bowl, add the eggs.
- In a third shallow bowl, add the shredded coconut.
- Working one at a time, coat the shrimp in the flour mixture, then the egg mixture, and then the shredded coconut.
- In a large skillet over medium-high heat, add the coconut oil and heat until shimmering.
- Working in batches, add the shrimp to the pan and fry for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the shrimp to a paper towel-lined plate and repeat with the remaining shrimp.
- Serve with your favorite sides and enjoy!
