Ingredients
1 lb. shrimp, peeled and deveined
1 cup shredded coconut
1/2 cup all-purpose flour
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. salt
1/4 tsp. ground black pepper
2 eggs, beaten
1/2 cup coconut oil, for frying
Directions
In a shallow bowl, combine the flour, garlic powder, onion powder, salt, and pepper.
In a separate shallow bowl, add the eggs.
In a third shallow bowl, add the shredded coconut.
Working one at a time, coat the shrimp in the flour mixture, then the egg mixture, and then the shredded coconut.
In a large skillet over medium-high heat, add the coconut oil and heat until shimmering.
Working in batches, add the shrimp to the pan and fry for 2-3 minutes per side, or until golden brown and cooked through.
Remove the shrimp to a paper towel-lined plate and repeat with the remaining shrimp.
Serve with your favorite sides and enjoy!
