  • 3 large carrots
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground ginger
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste


  1. Preheat oven to 350°F.
  2. Peel and slice carrots into rings.
  3. In a bowl, mix together cumin, coriander, ginger, garlic, olive oil, salt, and pepper.
  4. Place carrot rings in a single layer on a baking sheet.
  5. Brush spice mixture over the carrot rings.
  6. Bake for 20-25 minutes, until carrots are tender.
  7. Enjoy!
