Ingredients
- 3 large carrots
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of ground ginger
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper, to taste
Directions
- Preheat oven to 350°F.
- Peel and slice carrots into rings.
- In a bowl, mix together cumin, coriander, ginger, garlic, olive oil, salt, and pepper.
- Place carrot rings in a single layer on a baking sheet.
- Brush spice mixture over the carrot rings.
- Bake for 20-25 minutes, until carrots are tender.
