Ingredients
- 1/2 pound of penne pasta
- 1/2 cup of olive oil
- 1/4 cup of white wine vinegar
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped fresh basil
- 1/4 cup of grated Parmesan cheese
- 1/4 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of chopped tomatoes
- 1/2 cup of sliced red onion
- 1/2 cup of sliced black olives
- 1/2 cup of crumbled feta cheese
Directions
- Bring a large pot of salted water to a boil and add the penne.
- Cook the pasta until al dente, about 8 minutes.
- Drain the pasta and rinse with cold water to cool it.
- Transfer the cooled pasta to a large bowl.
- In a small bowl, whisk together the olive oil, white wine vinegar, parsley, basil, Parmesan, garlic powder, salt, and pepper.
- Pour the dressing over the pasta and toss to combine.
- Add the tomatoes, red onion, black olives, and feta cheese and toss to combine.
- Chill for at least 30 minutes before serving.
