  • 3 chicken breasts, cut into cubes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 bay leaf
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 3 cups chicken broth
  • 1 cup long grain white rice
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley


  1. In a large bowl, combine the chicken cubes, onion, garlic, curry powder, chili powder, cumin, coriander, bay leaf, turmeric, cinnamon, ginger, cardamom, and black pepper. Mix together until the chicken is evenly coated with the spices.
  2. Heat the olive oil in a large pot over medium-high heat. Add the chicken and cook until it is lightly browned and cooked through, about 7 minutes.
  3. Add the chicken broth and bring the mixture to a boil. Reduce the heat to low and simmer for 15 minutes.
  4. Add the rice to the pot and cook for 10 minutes, stirring occasionally. Add the peas and cook for an additional 5 minutes.
  5. Stir in the parsley and season with salt and pepper to taste. Serve hot.
