Ingredients

  • 4 large flour tortillas
  • 1/2 cup refried beans
  • 1/2 cup grated cheese (cheddar or mozzarella)
  • 1/4 cup sour cream
  • 1/4 cup pickled onions

Directions

  1. Heat a large skillet over medium heat.
  2. Add the tortillas to the skillet one at a time and heat for about 30 seconds on each side, until lightly browned.
  3. Spread each tortilla with a spoonful of refried beans, followed by a sprinkle of cheese.
  4. Fold the tortillas in half and heat for another 30 seconds, until the cheese is melted.
  5. Transfer the baleadas to a plate and top with sour cream and pickled onions.
