Ingredients
1 cup barley flour
1/2 cup rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon

Directions
In a medium bowl, whisk together the barley flour, rolled oats, baking powder, cinnamon, and salt.

Pour the wet ingredients into the dry ingredients, and mix until just combined.
Heat a non-stick skillet or griddle over medium-high heat.
Using a 1/4 cup measuring cup, pour the batter onto the griddle, and spread into a circle.
Cook for 2-3 minutes, or until the edges are golden brown and the pancake is cooked through.
Flip the pancake and cook for an additional 1-2 minutes.
Remove from the heat and serve with butter, syrup, or your favorite topping.
