  • 1 cup barley flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 cup milk
  • 2 tablespoons melted butter


  1. In a medium bowl, whisk together the barley flour, rolled oats, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk together the maple syrup, eggs, milk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients, and mix until just combined.
  4. Heat a non-stick skillet or griddle over medium-high heat.
  5. Using a 1/4 cup measuring cup, pour the batter onto the griddle, and spread into a circle.
  6. Cook for 2-3 minutes, or until the edges are golden brown and the pancake is cooked through.
  7. Flip the pancake and cook for an additional 1-2 minutes.
  8. Remove from the heat and serve with butter, syrup, or your favorite topping.
