Ingredients
1 cup all-purpose flour
1 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cardamom
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup grated zucchini
Directions
Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, oats, baking powder, baking soda, nutmeg, cardamom, and salt.
In a large bowl, beat together the butter and sugars until light and fluffy. Beat in the egg and vanilla until combined.
Stir in the zucchini. Gradually stir in the flour mixture until just combined.
Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart. Bake for 10-12 minutes, or until golden brown.
Remove from oven and let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
