Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 tablespoons curry powder
1 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric

Directions
Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the curry powder, ginger, cumin, coriander, turmeric, cardamom, cayenne pepper, and salt and cook for 1 minute.
Stir in the vegetable broth and tomato paste. Bring to a simmer and add the potatoes.
Cover and cook for 15 minutes, or until the potatoes are tender.
Stir in the coconut milk and simmer for 5 minutes.
Serve hot over cooked basmati rice.
