Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon sea salt
  • 1/2 cup vegetable broth
  • 2 tablespoons tomato paste
  • 4 potatoes, peeled and diced into 1/2-inch cubes
  • 1/2 cup coconut milk

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the curry powder, ginger, cumin, coriander, turmeric, cardamom, cayenne pepper, and salt and cook for 1 minute.
  3. Stir in the vegetable broth and tomato paste. Bring to a simmer and add the potatoes.
  4. Cover and cook for 15 minutes, or until the potatoes are tender.
  5. Stir in the coconut milk and simmer for 5 minutes.
  6. Serve hot over cooked basmati rice.
