Ingredients

  • 1 lb. carrots, peeled and sliced into ½ inch rounds.
  • 1 tablespoon olive oil.
  • 1 teaspoon minced garlic.
  • 1 teaspoon dried thyme.
  • Salt and pepper to taste.

Directions

  1. Preheat oven to 400°F.
  2. Place carrots on a baking sheet and drizzle with olive oil.
  3. Sprinkle with garlic, thyme, salt and pepper.
  4. Toss to coat evenly.
  5. Bake for 25-30 minutes, or until carrots are tender and lightly browned.
  6. Serve warm.
