Ingredients
1/2 cup butter, softened
1/2 cup pumpkin puree
1/2 cup light brown sugar
1/4 cup granulated sugar
1 egg

Directions
Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper or silicone baking mats.

Beat in the egg and vanilla extract until combined.
In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
Stir the dry ingredients into the wet ingredients until just combined.
Fold in the chocolate chips.
Drop cookie dough by tablespoonfuls onto prepared baking sheets.
Bake for 10 to 12 minutes in preheated oven, or until edges are lightly browned.
Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
