Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 6 egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped black walnuts

Directions

  1. In a medium saucepan, combine the cream and milk and heat over medium heat until just boiling. Remove from the heat and set aside.
  2. In a medium bowl, whisk together the egg yolks and sugar until smooth. Slowly pour the hot cream mixture into the egg yolks, whisking constantly.
  3. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from the heat and stir in the cinnamon and black walnuts.
  4. Strain the mixture into a bowl and cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.
  5. Once the mixture is thoroughly chilled, freeze in an ice cream maker according to the manufacturer’s instructions.
  6. Transfer the ice cream to an airtight container and freeze for at least 2 hours before serving.
