Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 teaspoon garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 2 cups smoked turkey, diced
  • 2 (14.5-ounce) cans black beans, drained and rinsed
  • 2 cups chicken broth
  • 1/4 cup cilantro, chopped
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion, garlic, bell pepper, and jalapeno pepper and cook for 5 minutes, stirring occasionally.
  3. Add the cumin, smoked paprika, and chili powder and cook for 1 minute, stirring constantly.
  4. Add the smoked turkey, black beans, and chicken broth and bring to a simmer.
  5. Reduce the heat to low and simmer for 20 minutes.
  6. Stir in the cilantro and season with salt and pepper, to taste.
  7. Serve warm.
