Ingredients

  • 1/3 cup honey

  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 cups finely chopped apples (about 2 medium apples)

Directions

  1. Preheat oven to 350°F. Grease a 12-cup muffin tin with cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, yogurt, honey, butter, milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the apples until evenly distributed.
  6. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
