Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup raw cashews
  • 2 cups chicken broth
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, ginger, cumin, coriander, turmeric, cinnamon, cardamom, cloves, cayenne pepper, and salt and stir until fragrant, about 1 minute.
  3. Add the chicken and cashews and cook, stirring occasionally, until the chicken is cooked through, about 8 minutes.
  4. Add the broth, coconut milk, and lime juice and bring to a simmer. Reduce the heat to low and simmer until the sauce has thickened, about 10 minutes.
  5. Garnish with fresh cilantro and serve.
