Ingredients
- 1 pound linguine
- 2 tablespoons olive oil
- 1 pound chicken, cut into cubes
- 2 cloves garlic, minced
- 1/2 cup diced onion
- 1 cup diced red bell pepper
- 1 cup diced yellow bell pepper
- 1/2 cup sliced mushrooms
- 1/2 cup white wine
- 2 cups heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Directions
- Bring a large pot of salted water to a boil. Add the linguine and cook until al dente, about 8 minutes.
- Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5 minutes. Add the garlic, onion, bell peppers, and mushrooms and cook for another 5 minutes.
- Pour in the white wine and cook until the liquid is reduced by half, about 3 minutes. Stir in the cream and bring to a simmer. Simmer for 5 minutes, stirring occasionally.
- Drain the linguine and add to the skillet. Stir in the Parmesan cheese and parsley. Season with salt and pepper to taste. Serve hot.
