Ingredients

  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1/2 medium onion, diced
  • 1 jalapeño pepper, minced (optional)
  • 2 cloves garlic, minced
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 pound cooked shrimp, peeled and deveined
  • 1/4 cup chopped fresh cilantro

Directions

  1. Bring a large pot of salted water to a boil. Add the penne and cook until just al dente, about 8 minutes.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion, jalapeño, garlic, bell peppers, thyme, cumin, paprika, salt, and pepper. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  3. Add the chicken broth and cream to the skillet and bring to a simmer. Add the cooked pasta and shrimp and cook until the pasta is heated through, about 3 minutes.
  4. Stir in the cilantro and serve hot.
