Ingredients
- 1 cup Guinness stout
- ½ cup butter
- ¾ cup cocoa powder
- 2 eggs
- 2/3 cup sour cream
- 2 cups all-purpose flour
- 1 ½ cups sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon espresso powder
- For the frosting:
- 1 cup butter, softened
- 3-4 cups confectioner's sugar
- 1 teaspoon espresso powder
- 2 tablespoons Guinness stout
Directions
- Preheat oven to 350 degrees F.
- In a medium saucepan, melt butter and Guinness over medium heat.
- Remove from heat and stir in cocoa powder until smooth.
- In a large bowl, whisk together eggs and sour cream until combined.
- Slowly add in Guinness mixture, whisking continuously.
- In a separate bowl, sift together flour, sugar, baking soda, baking powder, and espresso powder.
- Gradually add the dry ingredients to the wet ingredients, stirring until combined.
- Divide batter evenly among cupcake liners, filling each about ¾ full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cupcakes to cool completely before frosting.
- To make the frosting, beat butter in a bowl until creamy.
- Gradually add in confectioner's sugar, espresso powder, and Guinness, beating until combined and desired consistency is reached.
