2 tablespoons chopped fresh herbs (such as thyme or oregano)

Directions
In a large bowl, dissolve the yeast and sugar in the warm water and let stand for 5 minutes.
Add the flour, salt, olive oil, cheese, and herbs to the yeast mixture and stir until combined.
Turn the dough out onto a lightly floured surface and knead for 5 minutes, or until the dough is smooth and elastic.
Lightly oil a large bowl and place the dough in the bowl, turning to coat. Cover the bowl with a damp cloth and let rise in a warm place for 1 hour, or until doubled in size.
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Turn the dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece of dough into a rope about 12 inches (30 cm) long. Form each rope into a pretzel shape and place on the prepared baking sheet.
Brush the pretzels with the beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes, or until golden brown.
