- 1 (14-ounce) can diced tomatoes
- 1 (14-ounce) can coconut milk
- 1 pound pork loin, cubed
- 1/4 cup cilantro, chopped
Directions
- In a large skillet, heat the oil over medium heat. Add the onion and cook for 3 minutes, stirring occasionally.
- Add the garlic, ginger, cumin, coriander, turmeric, chili powder, garam masala, and salt. Cook for 2 minutes, stirring often.
- Add the tomatoes and coconut milk. Bring to a simmer and cook for 10 minutes.
- Add the pork and cook for 10 minutes, stirring occasionally.
- Garnish with cilantro and serve with rice.
