Ingredients

  • 4 potatoes, peeled and diced
  • 4 strips of bacon, diced
  • 1 onion, diced
  • 1 teaspoon paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 quarts chicken broth
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley

Directions

  1. In a large pot over medium heat, cook the bacon until it is crisp. Add the onions and cook until soft, about 5 minutes.
  2. Add the potatoes, paprika, caraway seeds, salt, and pepper, and cook for 2 minutes. Pour in the chicken broth and bring to a boil.
  3. Reduce heat to low and simmer for 20 minutes, or until the potatoes are tender.
  4. Remove from heat and stir in the sour cream. Top with parsley and serve.
