Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 1/4 cup dry sherry
  • 2 tablespoons cornstarch
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup chicken broth
  • 1/2 cup water
  • 2 cups chow mein noodles
  • 1/4 cup green onions, sliced

Directions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chicken cubes and cook until lightly browned, about 4 minutes.
  3. In a small bowl, combine the soy sauce, sherry, cornstarch, garlic, ginger, and red pepper flakes. Add the mixture to the skillet and cook for 1 minute.
  4. Add the chicken broth, water, and chow mein noodles. Cook, stirring occasionally, until the noodles are cooked through, about 5 minutes.
  5. Stir in the green onions and cook for 1 minute.
  6. Serve hot.
