1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup soy sauce
1/4 cup dry sherry
2 tablespoons cornstarch
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
1/4 teaspoon crushed red pepper flakes
1/2 cup chicken broth
1/2 cup water
2 cups chow mein noodles
1/4 cup green onions, sliced
Directions
Heat the vegetable oil in a large skillet over medium heat.
Add the chicken cubes and cook until lightly browned, about 4 minutes.
In a small bowl, combine the soy sauce, sherry, cornstarch, garlic, ginger, and red pepper flakes. Add the mixture to the skillet and cook for 1 minute.
Add the chicken broth, water, and chow mein noodles. Cook, stirring occasionally, until the noodles are cooked through, about 5 minutes.
Stir in the green onions and cook for 1 minute.
Serve hot.
