Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 red pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sliced almonds

Directions

  1. Heat oil in a large skillet over medium heat.
  2. Add onion and garlic and cook for 3 minutes, stirring occasionally.
  3. Add paprika, cumin, chili powder, salt, and pepper and cook for 1 minute more.
  4. Add chickpeas, tomatoes, and red pepper and bring to a simmer.
  5. Reduce heat to low and simmer for 15 minutes, stirring occasionally.
  6. Add cilantro and almonds and cook for 5 minutes more.
  7. Serve over a bed of couscous or rice.
