Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup long-grain white rice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon sea salt
  • 2 1/2 cups vegetable broth
  • 1/2 cup frozen peas
  • 1/4 cup diced sundried tomatoes

Directions

  1. Heat oil in a large pot over medium heat. Add onion and bell pepper and sauté for 5 minutes, until softened.
  2. Add rice, garlic powder, oregano, basil, paprika, turmeric, and salt. Stir to combine.
  3. Add vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 25 minutes.
  4. Remove from heat and stir in peas and sundried tomatoes. Cover and let stand for 5 minutes.
  5. Serve warm.
