Ingredients

  • 2 large potatoes, grated
  • 1 onion, finely chopped
  • 2 eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Salt and freshly ground black pepper to taste
  • Vegetable oil, for frying
    • Directions

      1. In a large bowl, combine the grated potatoes, onion, eggs, flour, baking powder, salt, and pepper.
      2. Mix together until well combined.
      3. Heat a large skillet over medium-high heat and add enough vegetable oil to coat the bottom of the pan.
      4. Spoon the potato mixture into the hot oil and flatten into pancakes.
      5. Fry for 2-3 minutes on each side, or until golden brown and crispy.
      6. Remove from the skillet and place on a paper towel-lined plate to absorb any excess oil.
      7. Serve hot with your favorite condiments.
