Ingredients
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 cup sliced mushrooms
- 1/2 cup sliced carrots
- 1/2 cup frozen green peas
- 1/4 cup butter
- 2 cloves minced garlic
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup grated Parmesan cheese
Directions
- Bring a large pot of lightly salted water to a boil. Add tortellini and cook for 8 to 10 minutes or until al dente; drain.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add onion, mushrooms, carrots, and peas. Cook and stir for 5 minutes, or until vegetables are tender.
- In a medium saucepan, melt butter over medium heat. Add garlic, and cook for 1 minute. Stir in flour until smooth. Gradually stir in milk, and cook, stirring constantly, until mixture is thick and bubbly.
- Add salt and pepper. Stir in Parmesan cheese until melted. Reduce heat to low, and simmer for 2 minutes, stirring occasionally.
- Add cooked tortellini and vegetables to sauce, and stir to combine.
- Cook for 5 minutes, or until heated through.
