Ingredients

  • 3 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground red chili pepper
  • 1/2 teaspoon garam masala
  • 1 tablespoon ground ginger
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, diced
  • 2 cups okra, sliced
  • 1/2 cup water
  • Salt, to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the cumin, mustard, and coriander seeds, stirring to combine.
  3. Add the turmeric, red chili pepper, garam masala, ginger, garlic, onion, and bell pepper. Cook for 5 minutes, stirring occasionally.
  4. Add the tomatoes and okra and cook for an additional 5 minutes.
  5. Add the water and bring to a boil. Reduce the heat to low, cover, and simmer for 10 minutes.
  6. Season with salt to taste.
  7. Serve hot.
