Ingredients

  • 2 acorn squash, halved and seeded
  • 1 cup cooked brown rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1 teaspoon garam masala
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon sea salt
  • 1/4 cup raisins
  • 1/4 cup chopped dried apricots
  • 1/4 cup chopped toasted cashews

Directions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Place the squash halves on the baking sheet and bake for 20 minutes.
  3. Meanwhile, heat a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Add the curry powder, garam masala, turmeric, cumin, cinnamon, coriander, ginger, and salt and cook for 1 minute.
  5. Add the cooked brown rice, raisins, apricots, and cashews and cook for 5 minutes.
  6. Remove the squash from the oven and fill each half with the curried veggie mixture.
  7. Return the squash to the oven and bake for 10 minutes.
  8. Serve with a side of steamed vegetables.
