Ingredients
2 acorn squash, halved and seeded
1 cup cooked brown rice
1 onion, chopped
2 cloves garlic, minced
1 teaspoon curry powder
1 teaspoon garam masala
1/4 teaspoon turmeric
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 teaspoon ground ginger
1/4 teaspoon sea salt
1/4 cup raisins
1/4 cup chopped dried apricots
1/4 cup chopped toasted cashews
Directions
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Place the squash halves on the baking sheet and bake for 20 minutes.
Meanwhile, heat a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the curry powder, garam masala, turmeric, cumin, cinnamon, coriander, ginger, and salt and cook for 1 minute.
Add the cooked brown rice, raisins, apricots, and cashews and cook for 5 minutes.
Remove the squash from the oven and fill each half with the curried veggie mixture.
Return the squash to the oven and bake for 10 minutes.
Serve with a side of steamed vegetables.
