Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 1/2 cup onions, finely chopped
  • 1/2 cup red bell peppers, finely chopped
  • 1 (24-ounce) jar marinara sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 4 haddock fillets, about 6 ounces each
  • Salt and freshly ground pepper, to taste

Directions

  1. Heat olive oil in a large skillet over medium heat. Add garlic, onions and red bell peppers and cook for about 5 minutes, or until vegetables are tender.
  2. Add marinara sauce, oregano, basil and red pepper flakes and stir to combine. Bring to a simmer and reduce heat to medium-low. Simmer for 10 minutes, or until sauce is thickened.
  3. Season haddock fillets with salt and pepper and add to the skillet. Simmer for 8-10 minutes, or until fish is cooked through.
  4. Serve hot with cooked pasta or rice.
